這個是貓貓最喜歡的特色飯類食品。 在這裡的嘉年華、拍賣會或其他節慶, 一定見這小食檔。
Prawn Paella
Serves: 4
Ingredients:
-
1 Kg Whole medium green prawns peeled and de-veined
-
1 small onion, chopped
-
1 red capsicum, chopped
-
2 medium tomatoes, chopped
-
1/2 cup frozen peas
-
3 cloves of garlic, finely chopped
-
4 cups of chicken stock
-
1/4 cup of olive oil
-
1/2 teaspoon saffron, soaked in 2 tablespoons of hot water
-
2 cups of uncooked long-grain rice
-
2 tables spoons chopped parsley
What to do:
-
Heat oil in large fry pan, add onion, garlic and capsicum and cook on medium heat for 2-3 minutes, then stir in rice and mix well

Add stock, saffron and tomatoes. Mix well and bring to the boil
-
Reduce heat to a simmer and cook uncovered for 15 minutes without stirring.

Add prawns and peas on top of rice, cover fry pan and cook for a further 10 minutes or until rice is tender and stock absorbed.

Sprinkle with parsley and serve.
西班牙蝦菜飯
供四人
材料:
-
1 kg 中蝦, 剝殼剔腸
-
1個 小洋蔥,切粒
-
1個小 紅燈籠椒, 切粒
-
2個 中蕃茄, 切粒
-
1/2 杯急凍青豆
-
3 粒蒜頭, 切碎
-
4 杯原汁雞湯 (貓貓通常以 2 粒濃縮雞精 /粒代替 )
-
1/4 杯橄欖油 (可以剔除)
-
1/2 茶匙藏紅花精, 溝入2 湯匙熱水 (藏紅花精最好找粉狀, 顏色是紅橙色, 但溝水後變黃色)
-
2 杯米 (米的分量, 視乎各家的食量而定 )
-
2 湯匙切碎洋芫荽 (欧芹)
做法:
-
燒紅鑊加油, 倒入洋蔥、蒜頭和紅燈籠椒,以中火煮 2-3 分鐘, 之後再放入米及熱水撈均煮
-
加入雞粒, 藏紅花精和蕃茄撈均一齊煮
-
較細火煨 15分鐘, 不用冚蓋、不用搞
-
加入蝦、青豆在飯面, 冚蓋 10分鐘或; 直至飯熟透 (貓貓做法是, 直接用飯覆蓋蝦、青豆來焗熟, 較入味)
-
灑上湯匙切碎洋芫荽 (歐芹), 上碟
(以貓貓經驗, 水的分量不能以一般電飯煲的作標準, 要視乎米的成熟程度。 因為貓貓喜歡吃軟身飯, 所以煮的時候, 不停適當地加熱水)
